Ingredients

  • 1 lb boneless chicken breasts, cut into cubes
  • 1/2 cup sherry
  • 1/2 cup flour
  • 1/4 cup butter
  • 1/2 cup chicken broth
  • 1/2 cup heavy cream
  • 1/4 cup dry white wine
  • 1/4 teaspoon ground nutmeg
  • 2 cloves garlic, minced
  • Salt and pepper, to taste
  • 2 tablespoons fresh parsley, chopped

Directions

  1. In a large bowl, mix together the flour, salt, and pepper. Dip the chicken cubes in the flour mixture to coat.
  2. In a large skillet over medium heat, melt the butter. Add the chicken cubes and cook until golden brown, about 8 minutes.
  3. Add the garlic and nutmeg to the pan and cook for 1 minute. Pour in the sherry, chicken broth, white wine, and cream. Bring the mixture to a boil.
  4. Reduce the heat to low and simmer for 15 minutes, stirring occasionally. Add salt and pepper to taste.
  5. Serve the Chicken Sherry over cooked rice or pasta and garnish with fresh parsley.
