- 2 cups all-purpose flour

Directions
- Preheat oven to 350°F. Grease and flour a 9-inch round cake pan.
- In a blender, combine flour, baking powder, baking soda, cinnamon, nutmeg, ginger, eggs, sugar, oil, and applesauce. Blend until smooth.
- Stir in carrots. Pour batter into prepared pan.
