Ingredients

  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 2 teaspoons ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/4 teaspoon ground ginger
  • 2 large eggs
  • 1 cup granulated sugar
  • 1/2 cup vegetable oil
  • 1/4 cup applesauce
  • 2 cups grated carrots

Directions

  1. Preheat oven to 350°F. Grease and flour a 9-inch round cake pan.
  2. In a blender, combine flour, baking powder, baking soda, cinnamon, nutmeg, ginger, eggs, sugar, oil, and applesauce. Blend until smooth.
  3. Stir in carrots. Pour batter into prepared pan.
  4. Bake for 30 minutes or until a toothpick inserted into the center comes out clean. Cool completely before icing.
