Ingredients

  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 cup butter, softened
  • 1 cup sugar
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • 1/2 cup mashed ripe bananas (about 2 medium)
  • 1/2 cup flaked coconut
  • 1/2 cup chopped macadamia nuts

Directions

  1. Preheat oven to 350°F (177°C). Grease a 9x13-inch baking pan.
  2. In a medium bowl, whisk together flour, baking powder, baking soda, and salt; set aside.
  3. In a large bowl, beat butter and sugar with an electric mixer until light and fluffy. Beat in eggs and vanilla until blended. Add mashed bananas and mix until combined.
  4. Gradually add dry ingredients, mixing until just blended. Stir in coconut and macadamia nuts. Spread batter into prepared pan.
  5. Bake for 25 to 30 minutes, or until a toothpick inserted in the center comes out clean. Cool completely before cutting into bars.
