Ingredients

  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup butter, softened
  • 1/2 cup light brown sugar
  • 1/2 cup granulated sugar
  • 2 eggs
  • 3 ripe bananas, mashed
  • 1 teaspoon vanilla extract
  • 1/4 cup chopped walnuts
  • 2 tablespoons grated fresh ginger

Directions

  1. Preheat the oven to 350°F. Grease a 9x5-inch loaf pan and set aside.
  2. In a medium bowl, whisk together the flour, baking soda, baking powder, and salt. Set aside.
  3. In a large bowl, cream together the butter and sugars until light and fluffy.
  4. Add the eggs one at a time, beating until combined after each addition.
  5. Add the mashed bananas and vanilla extract, and beat until combined.
  6. Slowly add the dry ingredients, scraping down the sides of the bowl as needed.
  7. Fold in the walnuts and ginger.
  8. Pour the batter into the prepared pan and bake for 40-45 minutes, until a toothpick inserted into the center comes out clean.
  9. Let cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
