Ingredients

  • 1/2 lb. walleye fillet, skinned
  • 1/4 cup plain bread crumbs
  • 1/4 cup grated Parmesan cheese
  • 1 large egg
  • 2 tablespoons freshly squeezed lemon juice
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon salt
  • 1/4 teaspoon ground black pepper
  • 1 tablespoon butter, melted

Directions

  1. Preheat oven to 375°F.
  2. In a medium bowl, combine bread crumbs, Parmesan cheese, egg, lemon juice, garlic powder, oregano, salt, and pepper. Mix until well combined.
  3. Using a food processor, pulse walleye fillet until it’s shredded. Add shredded fish to the bowl and mix until everything is combined.
  4. Line a baking sheet with parchment paper. Using a 1/4 cup measure, scoop out walleye mixture and form into cakes. Place on the prepared baking sheet and brush with melted butter.
  5. Bake for 20-25 minutes, or until golden brown.
