Ingredients
- 1/2 lb. walleye fillet, skinned
- 1/4 cup plain bread crumbs
- 1/4 cup grated Parmesan cheese
- 1 large egg
- 2 tablespoons freshly squeezed lemon juice
- 1/2 teaspoon garlic powder
- 1/2 teaspoon dried oregano
- 1/2 teaspoon salt
- 1/4 teaspoon ground black pepper
- 1 tablespoon butter, melted
Directions
- Preheat oven to 375°F.
- In a medium bowl, combine bread crumbs, Parmesan cheese, egg, lemon juice, garlic powder, oregano, salt, and pepper. Mix until well combined.
- Using a food processor, pulse walleye fillet until it’s shredded. Add shredded fish to the bowl and mix until everything is combined.
- Line a baking sheet with parchment paper. Using a 1/4 cup measure, scoop out walleye mixture and form into cakes. Place on the prepared baking sheet and brush with melted butter.
- Bake for 20-25 minutes, or until golden brown.
