Ingredients
- 1 lb flank steak
- 1/4 cup olive oil
- 2 cloves garlic, minced
- 2 tablespoons lime juice
- 1 teaspoon chili powder
- 1/2 teaspoon cumin
- 1/2 teaspoon oregano
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 mango, diced
- 1 avocado, diced
- 1/4 cup cilantro, chopped
- 1/4 cup red onion, diced
- 1 jalapeno, diced
- 1 tablespoon lime juice
- 1/2 teaspoon salt
- 10-12 small flour or corn tortillas
Directions
- In a medium bowl, mix together the olive oil, garlic, 2 tablespoons lime juice, chili powder, cumin, oregano, 1/2 teaspoon salt, and black pepper. Add the steak to the bowl and toss to coat. Marinate for at least 30 minutes.
- Meanwhile, prepare the salsa. In a medium bowl, combine the mango, avocado, cilantro, red onion, jalapeno, 1 tablespoon lime juice, and 1/2 teaspoon salt. Mix until all ingredients are combined.
- Heat a cast iron skillet or grill pan to medium-high heat. Add the steak and cook for 4-6 minutes per side, or until the steak is cooked to your desired level of doneness. Let the steak rest for 5 minutes before slicing.
- To assemble the tacos, heat the tortillas in a dry skillet over medium heat. Top each tortilla with a few slices of steak, then top with the mango avocado salsa. Enjoy!
