Ingredients

  • 2 packages of ramen noodles
  • 2 cups of fresh spinach, chopped
  • 2 cups of cooked pasta, any shape
  • 1/2 cup of sliced green onions
  • 1/4 cup of toasted sesame seeds
  • 1/2 cup of sliced almonds
  • 1/2 cup of olive oil
  • 2 tablespoons of white vinegar
  • 1 tablespoon of dijon mustard
  • 1 tablespoon of sugar
  • Salt and pepper to taste

Directions

  1. Cook the ramen noodles according to package instructions.
  2. In a large bowl, combine the cooked ramen noodles, spinach, cooked pasta, green onions, sesame seeds, and almonds.
  3. In a small bowl, whisk together the olive oil, white vinegar, dijon mustard, sugar, salt, and pepper. Pour the dressing over the noodle mixture and toss to coat.
  4. Refrigerate for at least 30 minutes before serving. Enjoy!
