Ingredients
- 2 packages of ramen noodles
- 2 cups of fresh spinach, chopped
- 2 cups of cooked pasta, any shape
- 1/2 cup of sliced green onions
- 1/4 cup of toasted sesame seeds
- 1/2 cup of sliced almonds
- 1/2 cup of olive oil
- 2 tablespoons of white vinegar
- 1 tablespoon of dijon mustard
- 1 tablespoon of sugar
- Salt and pepper to taste
Directions
- Cook the ramen noodles according to package instructions.
- In a large bowl, combine the cooked ramen noodles, spinach, cooked pasta, green onions, sesame seeds, and almonds.
- In a small bowl, whisk together the olive oil, white vinegar, dijon mustard, sugar, salt, and pepper. Pour the dressing over the noodle mixture and toss to coat.
