Ingredients
- 2 pounds potatoes, peeled and diced
- 1/2 cup pickled jalapenos, finely chopped
- 1/2 cup mayonnaise
- 1/4 cup chopped fresh cilantro
- 1/4 cup chopped red onion
- 1 teaspoon garlic powder
- 1 teaspoon cumin
- Salt and pepper to taste
Directions
- In a large pot, bring the potatoes to a boil in salted water.
- Reduce heat and simmer for 10 minutes, or until potatoes are tender.
- Drain potatoes and let cool.
- In a large bowl, combine potatoes, jalapenos, mayonnaise, cilantro, onion, garlic powder, cumin, salt and pepper.
- Mix until combined.
- Refrigerate for at least 1 hour before serving.
