Ingredients

  • 1 cup uncooked quinoa
  • 2 cups vegetable broth
  • 1 cup fresh or frozen peas
  • 1 tablespoon olive oil
  • Salt and pepper to taste

Directions

  1. In a medium saucepan, bring two cups of vegetable broth to a boil.
  2. Add the quinoa and reduce the heat to low. Simmer, covered, for 15 minutes.
  3. Add the peas and continue to simmer for an additional 5-10 minutes, or until the quinoa is cooked through.
  4. Stir in the olive oil and season with salt and pepper to taste.
  5. Serve the quinoa and peas warm.
