Ingredients
1 cup uncooked quinoa
2 cups vegetable broth
1 cup fresh or frozen peas
1 tablespoon olive oil

Directions
In a medium saucepan, bring two cups of vegetable broth to a boil.
Add the quinoa and reduce the heat to low. Simmer, covered, for 15 minutes.
Add the peas and continue to simmer for an additional 5-10 minutes, or until the quinoa is cooked through.
Stir in the olive oil and season with salt and pepper to taste.
Serve the quinoa and peas warm.
