Ingredients

  • 1 tablespoon olive oil
  • 1/2 onion, diced
  • 1 red bell pepper, diced
  • 1 green bell pepper, diced
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon chili powder
  • 1/2 teaspoon paprika
  • 1/4 teaspoon cayenne pepper
  • 1/2 teaspoon oregano
  • 1/2 teaspoon thyme
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 pound smoked sausage, cut into thin slices
  • 1/2 pound shrimp, peeled and deveined
  • 1 cup chicken broth
  • 1/4 cup diced tomatoes
  • 1/4 cup diced green onions
  • 1/4 cup fresh parsley, chopped

Directions

  1. Heat the olive oil in a large skillet over medium-high heat. Add the onion and bell peppers and sauté until softened, about 5 minutes.
  2. Add the garlic powder, chili powder, paprika, cayenne, oregano, thyme, salt and pepper. Cook, stirring, for 1 minute.
  3. Add the sausage slices and cook for 2 minutes. Add the shrimp and cook for another 2 minutes.
  4. Add the chicken broth and tomatoes, stirring to combine. Bring to a boil, then reduce heat to low and simmer for 5 minutes.
  5. Add the green onions and parsley, stirring to combine. Cook for another 2 minutes.
  6. Serve hot with a side of your favorite low-carb side dish.
