Ingredients
- 1 tablespoon olive oil
- 1/2 onion, diced
- 1 red bell pepper, diced
- 1 green bell pepper, diced
- 1/2 teaspoon garlic powder
- 1/2 teaspoon chili powder
- 1/2 teaspoon paprika
- 1/4 teaspoon cayenne pepper
- 1/2 teaspoon oregano
- 1/2 teaspoon thyme
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/2 pound smoked sausage, cut into thin slices
- 1/2 pound shrimp, peeled and deveined
- 1 cup chicken broth
- 1/4 cup diced tomatoes
- 1/4 cup diced green onions
- 1/4 cup fresh parsley, chopped
Directions
- Heat the olive oil in a large skillet over medium-high heat. Add the onion and bell peppers and sauté until softened, about 5 minutes.
- Add the garlic powder, chili powder, paprika, cayenne, oregano, thyme, salt and pepper. Cook, stirring, for 1 minute.
- Add the sausage slices and cook for 2 minutes. Add the shrimp and cook for another 2 minutes.
- Add the chicken broth and tomatoes, stirring to combine. Bring to a boil, then reduce heat to low and simmer for 5 minutes.
- Add the green onions and parsley, stirring to combine. Cook for another 2 minutes.
- Serve hot with a side of your favorite low-carb side dish.
