1 tablespoon olive oil
1/2 onion, diced
1 red bell pepper, diced
1 green bell pepper, diced
1/2 teaspoon garlic powder
1/2 teaspoon chili powder
1/2 teaspoon paprika

1/2 teaspoon thyme

1/2 pound shrimp, peeled and deveined
1 cup chicken broth

Directions
Heat the olive oil in a large skillet over medium-high heat. Add the onion and bell peppers and sauté until softened, about 5 minutes.
Add the garlic powder, chili powder, paprika, cayenne, oregano, thyme, salt and pepper. Cook, stirring, for 1 minute.
Add the sausage slices and cook for 2 minutes. Add the shrimp and cook for another 2 minutes.
Add the chicken broth and tomatoes, stirring to combine. Bring to a boil, then reduce heat to low and simmer for 5 minutes.
Add the green onions and parsley, stirring to combine. Cook for another 2 minutes.
Serve hot with a side of your favorite low-carb side dish.
