Ingredients

  • 1 lb. mild Italian sausage
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 2 tablespoons all-purpose flour
  • 1 teaspoon dried thyme
  • 1 teaspoon dried oregano
  • 1 teaspoon rubbed sage
  • 1/2 teaspoon dried rosemary
  • 1/2 teaspoon black pepper
  • 1 teaspoon kosher salt
  • 2 cups milk

Directions

  1. In a large skillet over medium-high heat, cook the sausage until browned, breaking it up with a wooden spoon as it cooks.
  2. Add the onion and garlic and cook for 5 minutes, stirring occasionally.
  3. Add the flour, thyme, oregano, sage, rosemary, pepper, and salt. Stir until combined and cook for 3 minutes.
  4. Slowly pour in the milk, stirring constantly to avoid lumps. Bring to a simmer and cook for 5 minutes, stirring occasionally.
  5. Reduce the heat to low and simmer for 15 minutes, stirring occasionally. The gravy will thicken as it cooks.
  6. Taste and adjust seasoning as needed.
  7. Serve over biscuits, toast, or mashed potatoes.
