Ingredients

  • 2 tablespoons olive oil
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 jalapeno pepper, seeded and diced
  • 1 can (14.5 ounces) diced tomatoes
  • 1 can (4 ounces) diced green chilies
  • 1 teaspoon chili powder
  • 1 teaspoon ground cumin
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 pounds boneless, skinless chicken breasts, cut into 1-inch cubes
  • 1/4 cup fresh cilantro, chopped
  • 1 lime, cut into wedges

Directions

  1. Heat the olive oil in a large skillet over medium heat. Add the onion and garlic and cook until softened, about 4 minutes.
  2. Add the jalapeno pepper, tomatoes, green chilies, chili powder, cumin, salt, and black pepper. Bring to a simmer and cook for 5 minutes.
  3. Add the chicken and cook until the chicken is cooked through, about 8 minutes.
  4. Garnish with cilantro and lime wedges, if desired.
