Ingredients
- 2 tablespoons olive oil
- 1 onion, diced
- 2 cloves garlic, minced
- 1 jalapeno pepper, seeded and diced
- 1 can (14.5 ounces) diced tomatoes
- 1 can (4 ounces) diced green chilies
- 1 teaspoon chili powder
- 1 teaspoon ground cumin
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 2 pounds boneless, skinless chicken breasts, cut into 1-inch cubes
- 1/4 cup fresh cilantro, chopped
- 1 lime, cut into wedges
Directions
- Heat the olive oil in a large skillet over medium heat. Add the onion and garlic and cook until softened, about 4 minutes.
- Add the jalapeno pepper, tomatoes, green chilies, chili powder, cumin, salt, and black pepper. Bring to a simmer and cook for 5 minutes.
- Add the chicken and cook until the chicken is cooked through, about 8 minutes.
- Garnish with cilantro and lime wedges, if desired.
