Ingredients

  • 1/2 cup butter, softened
  • 1/2 cup light brown sugar
  • 1 egg
  • 1/2 teaspoon vanilla extract
  • 1 cup all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 cup dark chocolate chips
  • 1/2 cup mini marshmallows
  • 1/2 cup semi-sweet chocolate chips, melted

Directions

  1. Preheat oven to 350 degrees F. Line a baking sheet with parchment paper.
  2. In a large bowl, cream together butter and brown sugar until light and fluffy.
  3. Beat in egg and vanilla extract.
  4. In a separate bowl, whisk together flour, baking powder and salt. Gradually add to butter mixture and mix until just combined.
  5. Fold in dark chocolate chips and marshmallows.
  6. Drop by rounded tablespoons onto prepared baking sheet. Bake for 10 minutes or until lightly golden.
  7. Remove from oven and let cool on baking sheet for 5 minutes before transferring to a wire rack.
  8. Once cooled, dip each cookie into the melted semi-sweet chocolate chips. Place on parchment paper and let cool completely.
