Ingredients
1 cup quinoa
2 tablespoons olive oil
1 leek, finely chopped
1/2 cup kumquats, chopped
1/4 cup fresh parsley, chopped
1/2 teaspoon sea salt
1/4 teaspoon black pepper
Directions
Rinse the quinoa in a fine sieve for 2-3 minutes.
Heat the olive oil in a large skillet over medium heat. Add the leek and sauté for 3-4 minutes, until soft.
Add the kumquats and sauté for another 2 minutes.
Add the quinoa and stir to combine. Cook for 5 minutes, stirring occasionally.
Add 1 cup of water, the parsley, salt, and pepper. Cover and simmer for 15-20 minutes, or until the quinoa is tender and the liquid has been absorbed.
Serve warm.

Kumquats are an excellent source of vitamin C, fiber, and antioxidants.
Leeks are a member of the onion family and are a good source of vitamins A and C.
