Quinoa with Kumquats and Leeks

Ingredients

  • 1 cup quinoa
  • 2 tablespoons olive oil
  • 1 leek, finely chopped
  • 1/2 cup kumquats, chopped
  • 1/4 cup fresh parsley, chopped
  • 1/2 teaspoon sea salt
  • 1/4 teaspoon black pepper

Directions

  1. Rinse the quinoa in a fine sieve for 2-3 minutes.
  2. Heat the olive oil in a large skillet over medium heat. Add the leek and sauté for 3-4 minutes, until soft.
  3. Add the kumquats and sauté for another 2 minutes.
  4. Add the quinoa and stir to combine. Cook for 5 minutes, stirring occasionally.
  5. Add 1 cup of water, the parsley, salt, and pepper. Cover and simmer for 15-20 minutes, or until the quinoa is tender and the liquid has been absorbed.
  6. Serve warm.
