Ingredients
- 1 cup quinoa
- 2 tablespoons olive oil
- 1 leek, finely chopped
- 1/2 cup kumquats, chopped
- 1/4 cup fresh parsley, chopped
- 1/2 teaspoon sea salt
- 1/4 teaspoon black pepper
Directions
- Rinse the quinoa in a fine sieve for 2-3 minutes.
- Heat the olive oil in a large skillet over medium heat. Add the leek and sauté for 3-4 minutes, until soft.
- Add the kumquats and sauté for another 2 minutes.
- Add the quinoa and stir to combine. Cook for 5 minutes, stirring occasionally.
- Add 1 cup of water, the parsley, salt, and pepper. Cover and simmer for 15-20 minutes, or until the quinoa is tender and the liquid has been absorbed.
- Serve warm.
