Ingredients

  • 1 pound boneless, skinless chicken breasts, cut into 1-inch cubes
  • 1/2 cup uncooked wild rice
  • 4 cups low-sodium chicken broth
  • 1 cup diced onion
  • 1 cup diced celery
  • 1 cup diced carrots
  • 2 cloves garlic, minced
  • 1/4 cup butter
  • 1/4 cup all-purpose flour
  • 1 cup half-and-half
  • 1/2 teaspoon dried basil
  • 1/2 teaspoon dried thyme
  • Salt and pepper to taste

Directions

  1. In a large pot, combine the chicken, wild rice, and chicken broth. Bring to a boil over medium-high heat, then reduce the heat to low, cover, and simmer for 25 minutes.
  2. Add the onion, celery, carrots, and garlic to the pot. Increase the heat to medium-high and cook, stirring occasionally, for 5 minutes.
