Ingredients
- 1 cup quinoa
- 3 cups chicken broth
- 1 tablespoon olive oil
- 1 onion, diced
- 2 cloves garlic, minced
- 1 red bell pepper, diced
- 2 links chicken sausage, diced
- 1 can white beans, drained and rinsed
- 1 teaspoon paprika
- 1 teaspoon cumin
- 1/4 teaspoon cayenne pepper
- Salt and pepper, to taste
Directions
- In a medium saucepan, bring the quinoa and chicken broth to a boil.
- Reduce the heat to low and simmer, covered, for 15 minutes.
- Meanwhile, heat the olive oil in a large pot over medium heat. Add the onion and garlic and cook until softened, about 5 minutes.
- Add the bell pepper, chicken sausage, white beans, paprika, cumin, and cayenne pepper. Cook for another 5 minutes.
- Add the cooked quinoa and stir to combine. Simmer for 10 minutes.
- Season with salt and pepper, to taste. Serve warm.
