Ingredients

  • 1 cup quinoa
  • 3 cups chicken broth
  • 1 tablespoon olive oil
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 red bell pepper, diced
  • 2 links chicken sausage, diced
  • 1 can white beans, drained and rinsed
  • 1 teaspoon paprika
  • 1 teaspoon cumin
  • 1/4 teaspoon cayenne pepper
  • Salt and pepper, to taste

Directions

  1. In a medium saucepan, bring the quinoa and chicken broth to a boil.
  2. Reduce the heat to low and simmer, covered, for 15 minutes.
  3. Meanwhile, heat the olive oil in a large pot over medium heat. Add the onion and garlic and cook until softened, about 5 minutes.
  4. Add the bell pepper, chicken sausage, white beans, paprika, cumin, and cayenne pepper. Cook for another 5 minutes.
  5. Add the cooked quinoa and stir to combine. Simmer for 10 minutes.
  6. Season with salt and pepper, to taste. Serve warm.
