Ingredients

  • 1 tablespoon olive oil
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 red bell pepper, diced
  • 1 jalapeño pepper, seeded and diced
  • 1 (15-ounce) can black beans, drained and rinsed
  • 1 (14.5-ounce) can diced tomatoes
  • 1 (8-ounce) can tomato sauce
  • 3 tablespoons chili powder
  • 1 teaspoon ground cumin
  • 1 teaspoon smoked paprika
  • 1 teaspoon dried oregano
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 cup vegetable broth

Directions

  1. Heat the olive oil in a large pot over medium-high heat. Once hot, add the onions and garlic and sauté until the onions are softened, about 5 minutes.
  2. Add the bell pepper and jalapeño pepper and sauté for an additional 2 minutes.
  3. Add the black beans, diced tomatoes, tomato sauce, chili powder, cumin, smoked paprika, oregano, salt, and pepper. Stir to combine.
  4. Add the vegetable broth and stir to combine. Reduce the heat to medium-low and simmer for 10 minutes, stirring occasionally.
  5. Serve warm topped with your favorite vegan toppings.
