Ingredients

  • 1 lb. cod or other white fish, cut into 1-inch cubes
  • 2 tablespoons olive oil
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1/4 teaspoon ground turmeric
  • 1/2 teaspoon smoked paprika
  • 1/2 teaspoon kosher salt
  • 1/4 teaspoon freshly ground black pepper
  • 1/2 cup tomato paste
  • 2 cups chicken broth
  • 1/4 cup chopped fresh parsley

Directions

  1. Heat the olive oil in a large pot over medium-high heat. Add the onion and garlic and cook until softened, about 3 minutes.
  2. Add the cumin, coriander, turmeric, smoked paprika, salt, and pepper and cook for 1 minute more.
  3. Stir in the tomato paste and chicken broth and bring to a boil. Reduce the heat to low and simmer for 10 minutes.
  4. Add the fish and cook until it is cooked through, about 5 minutes.
  5. Stir in the parsley and serve.
