Ingredients
- 1 lb. cod or other white fish, cut into 1-inch cubes
- 2 tablespoons olive oil
- 1 onion, diced
- 3 cloves garlic, minced
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- 1/4 teaspoon ground turmeric
- 1/2 teaspoon smoked paprika
- 1/2 teaspoon kosher salt
- 1/4 teaspoon freshly ground black pepper
- 1/2 cup tomato paste
- 2 cups chicken broth
- 1/4 cup chopped fresh parsley
Directions
- Heat the olive oil in a large pot over medium-high heat. Add the onion and garlic and cook until softened, about 3 minutes.
- Add the cumin, coriander, turmeric, smoked paprika, salt, and pepper and cook for 1 minute more.
- Stir in the tomato paste and chicken broth and bring to a boil. Reduce the heat to low and simmer for 10 minutes.
- Add the fish and cook until it is cooked through, about 5 minutes.
- Stir in the parsley and serve.
