Ingredients
1 lb. cod or other white fish, cut into 1-inch cubes
2 tablespoons olive oil
1 onion, diced
3 cloves garlic, minced
1 teaspoon ground cumin
1 teaspoon ground coriander
1/4 teaspoon ground turmeric
1/2 teaspoon smoked paprika
1/2 teaspoon kosher salt
1/4 teaspoon freshly ground black pepper
1/2 cup tomato paste
2 cups chicken broth
1/4 cup chopped fresh parsley
Directions
Heat the olive oil in a large pot over medium-high heat. Add the onion and garlic and cook until softened, about 3 minutes.
Add the cumin, coriander, turmeric, smoked paprika, salt, and pepper and cook for 1 minute more.
Stir in the tomato paste and chicken broth and bring to a boil. Reduce the heat to low and simmer for 10 minutes.
Add the fish and cook until it is cooked through, about 5 minutes.
Stir in the parsley and serve.
