Ingredients

  • 2 pounds of potatoes, peeled and cut into small cubes
  • 1/2 cup of butter
  • 1/2 cup of milk
  • 1/2 cup of shredded cheddar cheese
  • 1/4 cup of bread crumbs
  • 1/4 cup of grated Parmesan cheese
  • 1/2 teaspoon of salt
  • 1/4 teaspoon of black pepper
  • 2 tablespoons of chopped fresh parsley

Directions

  1. Preheat oven to 350°F.
  2. In a large pot, bring potatoes to a boil in salted water. Cook for about 15 minutes, or until potatoes are tender.
  3. Drain potatoes and transfer to a large bowl.
  4. Add butter, milk, cheddar cheese, bread crumbs, Parmesan cheese, salt, and pepper to the potatoes. Mix until combined.
  5. Transfer mixture to a greased 9x13-inch baking dish.
  6. Sprinkle top with parsley.
  7. Bake for 30 minutes, or until top is golden and potatoes are cooked through.
