- 1/2 cup butter, softened
- 1 cup brown sugar
- 1 egg
- 1/2 teaspoon vanilla extract
- 1 cup mashed banana (about 2 medium bananas)
- 1/2 cup sweetened flaked coconut
- 1 1/2 cups all-purpose flour

Directions
- Preheat oven to 350 degrees F (175 degrees C). Grease baking sheets or line with parchment paper.
- In a large bowl, cream together butter and sugar until light and fluffy. Beat in egg and vanilla. Stir in mashed banana. In a separate bowl, combine the flour, baking soda, cinnamon, baking powder, and salt. Gradually blend into the creamed mixture. Mix in the coconut.
- Drop by teaspoonfuls onto the prepared baking sheets. Bake for 10 to 12 minutes in the preheated oven. Allow cookies to cool on baking sheet for 5 minutes before transferring to a wire rack to cool completely.
