Ingredients

  • 1 cup white rice
  • 1/2 cup diced carrots
  • 1/2 cup diced celery
  • 1/4 cup diced onion
  • 1/4 cup frozen peas
  • 2 tablespoons olive oil
  • 2 eggs
  • Salt and pepper to taste

Directions

  1. Cook the rice according to package instructions.
  2. Heat the olive oil in a large skillet over medium-high heat.
  3. Add the carrots, celery, and onion to the skillet and cook until vegetables are tender, about 5 minutes.
  4. Add the peas and cooked rice to the skillet and stir to combine.
