Ingredients

  • 1 cup all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 3/4 cup granulated sugar
  • 1/4 teaspoon salt
  • 1/2 cup butter, softened
  • 2 eggs
  • 1/2 cup peanut butter
  • 1 teaspoon vanilla extract
  • 1/2 cup buttermilk

Directions

  1. Preheat oven to 350°F (175°C). Grease a 9-inch round cake pan.
  2. In a medium bowl, whisk together flour, baking powder, baking soda, sugar and salt.
  3. In a large bowl, cream together butter and eggs until light and fluffy. Add peanut butter and vanilla extract and mix until combined.
  4. Add the dry ingredients and mix until just combined. Add the buttermilk and mix until smooth.
  5. Pour the batter into the prepared pan and bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean.
  6. Let the cake cool in the pan for 10 minutes before turning out onto a wire rack to cool completely.
