Ingredients
- 1 cup buckwheat flour
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 1 cup milk
- 2 tablespoons vegetable oil
- 2 tablespoons honey
- 1 egg
- Optional: Filling of your choice (i.e. jam, cheese, etc.)
Directions
- In a medium bowl, whisk together the buckwheat flour, baking powder, and salt.
- In a separate bowl, combine the milk, vegetable oil, honey, and egg. Whisk until combined.
- Add the wet ingredients to the dry ingredients and whisk until combined.
- Heat a skillet over medium heat. Grease the pan with a bit of oil or butter.
- Pour a heaping tablespoon of the batter into the pan and spread out into a circle.
- Cook on one side until the edges are golden brown and then flip and cook the other side until golden brown.
- Optional: Add filling of your choice (i.e. jam, cheese, etc.) and fold in half to create a half-moon shape.
- Serve warm.
Interesting Facts
- Buckwheat is actually not related to wheat and is gluten-free.
- Blinis are traditionally served with sour cream, caviar, or smoked salmon.
- The batter for blinis can be made ahead of time and stored in the refrigerator for up to 24 hours.
