Ingredients

  • 1 cup buckwheat flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 cup milk
  • 2 tablespoons vegetable oil
  • 2 tablespoons honey
  • 1 egg
  • Optional: Filling of your choice (i.e. jam, cheese, etc.)

Directions

  1. In a medium bowl, whisk together the buckwheat flour, baking powder, and salt.
  2. In a separate bowl, combine the milk, vegetable oil, honey, and egg. Whisk until combined.
  3. Add the wet ingredients to the dry ingredients and whisk until combined.
  4. Heat a skillet over medium heat. Grease the pan with a bit of oil or butter.
  5. Pour a heaping tablespoon of the batter into the pan and spread out into a circle.
  6. Cook on one side until the edges are golden brown and then flip and cook the other side until golden brown.
  7. Optional: Add filling of your choice (i.e. jam, cheese, etc.) and fold in half to create a half-moon shape.
  8. Serve warm.

Interesting Facts

  • Buckwheat is actually not related to wheat and is gluten-free.
  • Blinis are traditionally served with sour cream, caviar, or smoked salmon.
  • The batter for blinis can be made ahead of time and stored in the refrigerator for up to 24 hours.
