Blended-Berry Pancakes
Ingredients
1 cup buckwheat flour
1 teaspoon baking powder
1/2 teaspoon salt
1 cup milk
2 tablespoons vegetable oil
2 tablespoons honey
1 egg
Optional: Filling of your choice (i.e. jam, cheese, etc.)
Directions
In a medium bowl, whisk together the buckwheat flour, baking powder, and salt.
In a separate bowl, combine the milk, vegetable oil, honey, and egg. Whisk until combined.
Add the wet ingredients to the dry ingredients and whisk until combined.
Heat a skillet over medium heat. Grease the pan with a bit of oil or butter.
Pour a heaping tablespoon of the batter into the pan and spread out into a circle.
Cook on one side until the edges are golden brown and then flip and cook the other side until golden brown.
Optional: Add filling of your choice (i.e. jam, cheese, etc.) and fold in half to create a half-moon shape.
Serve warm.
Interesting Facts
Buckwheat is actually not related to wheat and is gluten-free.
Blinis are traditionally served with sour cream, caviar, or smoked salmon.
The batter for blinis can be made ahead of time and stored in the refrigerator for up to 24 hours.
