Ingredients

  • 2 pounds potatoes, peeled and cut into 1-inch cubes
  • 2 tablespoons olive oil
  • 1/4 cup balsamic vinegar
  • 2 tablespoons Dijon mustard
  • 1/4 cup chopped fresh parsley
  • 1/4 cup chopped fresh chives
  • Salt and pepper to taste

Directions

  1. Bring a pot of salted water to a boil. Add the potatoes and cook for 10-12 minutes, or until tender. Drain and let cool.
  2. In a large bowl, combine the potatoes, olive oil, balsamic vinegar, mustard, parsley, and chives. Season with salt and pepper to taste.
  3. Toss gently to combine. Serve at room temperature.
