Ingredients

  • 1 tablespoon olive oil
  • 1 ½ pounds boneless, skinless chicken thighs, cut into 1-inch pieces
  • 1 small onion, diced
  • 3 cloves garlic, minced
  • 2 tablespoons paprika
  • 1 teaspoon dried thyme
  • ½ teaspoon dried oregano
  • 2 cups chicken broth
  • 2 large carrots, diced
  • 2 stalks celery, diced
  • 1 pound potatoes, diced
  • Salt and pepper to taste
  • 2 tablespoons chopped fresh parsley

Directions

  1. Heat the olive oil in a large pot over medium heat.
  2. Add the chicken and cook for 5 minutes, stirring occasionally.
  3. Add the onion, garlic, paprika, thyme and oregano and cook for 3 minutes, stirring occasionally.
  4. Add the chicken broth, carrots, celery and potatoes and bring to a boil.
  5. Reduce the heat to low and simmer for 15 minutes, stirring occasionally.
  6. Season with salt and pepper to taste.
  7. Garnish with fresh parsley before serving.
