Ingredients
- 1 tablespoon olive oil
- 1 ½ pounds boneless, skinless chicken thighs, cut into 1-inch pieces
- 1 small onion, diced
- 3 cloves garlic, minced
- 2 tablespoons paprika
- 1 teaspoon dried thyme
- ½ teaspoon dried oregano
- 2 cups chicken broth
- 2 large carrots, diced
- 2 stalks celery, diced
- 1 pound potatoes, diced
- Salt and pepper to taste
- 2 tablespoons chopped fresh parsley
Directions
- Heat the olive oil in a large pot over medium heat.
- Add the chicken and cook for 5 minutes, stirring occasionally.
- Add the onion, garlic, paprika, thyme and oregano and cook for 3 minutes, stirring occasionally.
- Add the chicken broth, carrots, celery and potatoes and bring to a boil.
- Reduce the heat to low and simmer for 15 minutes, stirring occasionally.
- Season with salt and pepper to taste.
- Garnish with fresh parsley before serving.
