Ingredients
- 1 cup uncooked white rice
- 2 tablespoons olive oil
- 1 onion, diced
- 2 cloves garlic, minced
- 1 teaspoon ground cumin
- 1 teaspoon chili powder
- 1 (15-ounce) can black beans, drained and rinsed
- 2 cups vegetable broth
- Salt and pepper, to taste
- 1/4 cup fresh cilantro, chopped
Directions
- In a medium saucepan, heat the olive oil over medium heat. Add the onion and garlic and cook until softened, about 5 minutes.
- Add the cumin and chili powder and stir to combine. Add the rice and stir to combine.
- Add the black beans, vegetable broth, and salt and pepper. Bring to a boil, reduce heat to low, cover, and simmer for 15 minutes.
- Stir in the cilantro and serve.
