Ingredients

  • 1 cup uncooked white rice
  • 2 tablespoons olive oil
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon chili powder
  • 1 (15-ounce) can black beans, drained and rinsed
  • 2 cups vegetable broth
  • Salt and pepper, to taste
  • 1/4 cup fresh cilantro, chopped

Directions

  1. In a medium saucepan, heat the olive oil over medium heat. Add the onion and garlic and cook until softened, about 5 minutes.
  2. Add the cumin and chili powder and stir to combine. Add the rice and stir to combine.
  3. Add the black beans, vegetable broth, and salt and pepper. Bring to a boil, reduce heat to low, cover, and simmer for 15 minutes.
  4. Stir in the cilantro and serve.
