Ingredients

  • 1 (15-ounce) can chickpeas, drained and rinsed
  • 2 medium beets, cooked and peeled
  • 1/4 cup tahini
  • 2 cloves garlic, minced
  • Juice of 1 lemon
  • 1/4 cup extra-virgin olive oil
  • 1 teaspoon ground cumin
  • 1/2 teaspoon sea salt
  • 1/4 teaspoon ground black pepper

Directions

  1. Place the chickpeas, beets, tahini, garlic, lemon juice, olive oil, cumin, salt, and pepper in a food processor.
  2. Process until smooth and creamy, scraping down the sides of the bowl as needed.
  3. Taste and adjust seasonings as needed.
  4. Serve with your favorite dippers.
