  • 1 cup fresh tomatoes, diced
  • 1/2 cup red onion, finely chopped
  • 1 jalapeno pepper, seeded and minced
  • 1/4 cup fresh cilantro, chopped
  • 1/4 cup fresh lime juice
  • 1/4 cup fresh lemon juice
  • 1/4 cup fresh orange juice
  • 1/4 cup olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 avocado, diced (optional)
  • tortilla chips, for serving

Directions

  1. Bring a large pot of salted water to a boil. Add the shrimp and cook for 2-3 minutes until they turn pink and opaque. Drain and transfer to a bowl of ice water to cool. Once cooled, chop the shrimp into bite-sized pieces.
  2. In a large mixing bowl, combine the diced tomatoes, red onion, jalapeno pepper, and cilantro.
  3. In a separate small bowl, whisk together the lime juice, lemon juice, orange juice, olive oil, salt, and black pepper.
  4. Pour the citrus dressing over the tomato mixture and stir well to combine.
  5. Add the chopped shrimp to the bowl and gently toss to coat the shrimp with the dressing.
  6. Cover the bowl with plastic wrap and refrigerate for at least 1 hour to allow the flavors to meld together.
  7. Before serving, stir in the diced avocado, if desired.
  8. Serve the tomato shrimp ceviche chilled with tortilla chips on the side.
