Ingredients

  • 2 pounds beef round steak, cut into 4 pieces
  • 2 tablespoons vegetable oil
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 large onion, diced
  • 2 cloves garlic, minced
  • 2 cups beef broth
  • 1 (14.5 ounce) can diced tomatoes
  • 1 teaspoon dried basil
  • 1 teaspoon dried oregano
  • 1 teaspoon Worcestershire sauce
  • 2 tablespoons cornstarch
  • 2 tablespoons cold water
  • 2 cups fresh vegetables (such as carrots, peas, and/or potatoes), diced

Directions

  1. Heat oil in a large skillet over medium-high heat. Sprinkle round steak with salt and pepper.
  2. Add steak to the skillet and cook for 5 minutes per side, or until browned. Remove steak from skillet and set aside.
  3. Reduce heat to medium. Add onion and garlic to the skillet and cook for 5 minutes, or until onion is translucent.
  4. Add beef broth, tomatoes, basil, oregano, and Worcestershire sauce to the skillet. Simmer for 10 minutes.
  5. Return steak to the skillet and add vegetables. Cover and simmer for 15 minutes, or until vegetables are tender.
  6. In a small bowl, mix together cornstarch and cold water. Add to the skillet and stir until sauce is thickened.
  7. Serve steak and vegetables with sauce.
