Thai Drunken Noodles (Pad Kee Mao)
Ingredients
2 tablespoons olive oil
1/2 onion, chopped
1 clove garlic, minced
1 cup long-grain white rice
1 (14.5 ounce) can diced tomatoes with green chiles
1 teaspoon chili powder
1 teaspoon ground cumin
1/2 teaspoon garlic powder
1/2 teaspoon onion powder
2 1/2 cups chicken broth
Salt and pepper, to taste
Directions
Heat olive oil in a large skillet over medium heat.
Add onion and garlic and cook until onion is softened and garlic is fragrant, about 5 minutes.
Add rice and stir to coat.
Add diced tomatoes, chili powder, cumin, garlic powder, and onion powder. Stir to combine.
Add chicken broth and bring to a boil. Cover and reduce heat to low. Simmer for 15 minutes or until rice is tender.
Season with salt and pepper, to taste.
Serve and enjoy!
