Ingredients

  • 2 tablespoons olive oil
  • 1/2 onion, chopped
  • 1 clove garlic, minced
  • 1 cup long-grain white rice
  • 1 (14.5 ounce) can diced tomatoes with green chiles
  • 1 teaspoon chili powder
  • 1 teaspoon ground cumin
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 2 1/2 cups chicken broth
  • Salt and pepper, to taste

Directions

  1. Heat olive oil in a large skillet over medium heat.
  2. Add onion and garlic and cook until onion is softened and garlic is fragrant, about 5 minutes.
  3. Add rice and stir to coat.
  4. Add diced tomatoes, chili powder, cumin, garlic powder, and onion powder. Stir to combine.
  5. Add chicken broth and bring to a boil. Cover and reduce heat to low. Simmer for 15 minutes or until rice is tender.
  6. Season with salt and pepper, to taste.
  7. Serve and enjoy!
