Ingredients
- 2 tablespoons olive oil
- 1/2 onion, chopped
- 1 clove garlic, minced
- 1 cup long-grain white rice
- 1 (14.5 ounce) can diced tomatoes with green chiles
- 1 teaspoon chili powder
- 1 teaspoon ground cumin
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- 2 1/2 cups chicken broth
- Salt and pepper, to taste
Directions
- Heat olive oil in a large skillet over medium heat.
- Add onion and garlic and cook until onion is softened and garlic is fragrant, about 5 minutes.
- Add rice and stir to coat.
- Add diced tomatoes, chili powder, cumin, garlic powder, and onion powder. Stir to combine.
- Add chicken broth and bring to a boil. Cover and reduce heat to low. Simmer for 15 minutes or until rice is tender.
- Season with salt and pepper, to taste.
