Ingredients
1 package of empanada dough
2 cups of shredded Mexican cheese
1 can of poblano chiles, chopped
1/2 teaspoon of garlic powder
1/2 teaspoon of cumin
1/2 teaspoon of chili powder
Salt and pepper to taste
1 egg, lightly beaten
Directions
Preheat oven to 375 degrees Fahrenheit.
In a medium bowl, mix together the cheese, poblano chiles, garlic powder, cumin, chili powder, salt and pepper.
Lay out the empanada dough on a lightly floured surface.
Using a round cookie cutter, cut out circles of dough.
Spoon a tablespoon of the cheese and chile mixture onto each circle of dough.
Fold the dough over the filling and crimp the edges with a fork.
Place the empanadas onto a greased baking sheet.
Brush the tops of the empanadas with the beaten egg.
Bake for 20-25 minutes, or until golden brown.
Let cool and enjoy!
