Queso con Rajas Poblano Chile and Cheese Empanadas

Ingredients

  • 1 package of empanada dough
  • 2 cups of shredded Mexican cheese
  • 1 can of poblano chiles, chopped
  • 1/2 teaspoon of garlic powder
  • 1/2 teaspoon of cumin
  • 1/2 teaspoon of chili powder
  • Salt and pepper to taste
  • 1 egg, lightly beaten

Directions

  1. Preheat oven to 375 degrees Fahrenheit.
  2. In a medium bowl, mix together the cheese, poblano chiles, garlic powder, cumin, chili powder, salt and pepper.
  3. Lay out the empanada dough on a lightly floured surface.
  4. Using a round cookie cutter, cut out circles of dough.
  5. Spoon a tablespoon of the cheese and chile mixture onto each circle of dough.
  6. Fold the dough over the filling and crimp the edges with a fork.
  7. Place the empanadas onto a greased baking sheet.
  8. Brush the tops of the empanadas with the beaten egg.
  9. Bake for 20-25 minutes, or until golden brown.
  10. Let cool and enjoy!
