Ingredients

  • 1 block extra-firm tofu, drained and pressed
  • 1/2 onion, chopped
  • 1 bell pepper, chopped
  • 1 tablespoon olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon turmeric
  • 1 teaspoon nutritional yeast
  • salt and pepper to taste
  • 2 tablespoons chopped fresh parsley (optional)

Directions

  1. Crumble the drained tofu into small pieces with your hands.
  2. Heat olive oil in a skillet over medium heat, and add the onion and bell pepper. Cook for about 5 minutes until softened.
  3. Add the crumbled tofu and stir to combine. Cook for about 5 minutes, stirring occasionally.
  4. Add the garlic powder, turmeric and nutritional yeast. Cook for another 5 minutes, stirring occasionally.
  5. Season with salt and pepper to taste. Serve immediately, garnished with fresh parsley (optional).
