Ingredients
1 block extra-firm tofu, drained and pressed
1/2 onion, chopped
1 bell pepper, chopped
1 tablespoon olive oil
1 teaspoon garlic powder
1 teaspoon turmeric
1 teaspoon nutritional yeast
salt and pepper to taste
2 tablespoons chopped fresh parsley (optional)
Directions
Crumble the drained tofu into small pieces with your hands.
Heat olive oil in a skillet over medium heat, and add the onion and bell pepper. Cook for about 5 minutes until softened.
Add the crumbled tofu and stir to combine. Cook for about 5 minutes, stirring occasionally.
Add the garlic powder, turmeric and nutritional yeast. Cook for another 5 minutes, stirring occasionally.
Season with salt and pepper to taste. Serve immediately, garnished with fresh parsley (optional).
