In a small bowl, combine cherries, prosciutto, Parmesan cheese, garlic and olive oil. Mix until well-combined.
Lay the chicken breasts out flat on a cutting board and season with salt and pepper. Place a spoonful of the cherry mixture in the center of each chicken breast and fold the chicken over to enclose the filling.
Wrap each chicken breast in prosciutto and place on a baking sheet. Drizzle with balsamic vinegar and bake for 25-30 minutes, or until the chicken is cooked through.
