Ingredients
1 box of elbow macaroni
1 can black beans, drained and rinsed
1 can corn, drained
1 red bell pepper, diced
1 cup cherry tomatoes, halved
1/2 cup cilantro, chopped
1/2 cup red onion, diced
1/4 cup olive oil
1/4 cup lime juice
1 tablespoon chili powder
1 teaspoon cumin
1 teaspoon garlic powder
Salt and pepper, to taste
Directions
Cook macaroni according to package instructions.
Drain and rinse black beans and corn. Add to macaroni.
Add bell pepper, tomatoes, cilantro, and red onion to the macaroni mixture.
In a small bowl, whisk together olive oil, lime juice, chili powder, cumin, and garlic powder.
Pour dressing over macaroni mixture and stir to combine.
Season with salt and pepper, to taste.
Serve immediately, or refrigerate until ready to serve.
