Ingredients

  • 1 tablespoon of olive oil
  • 1 onion, diced
  • 2 cloves of garlic, minced
  • 1 jalapeno pepper, diced
  • 1 teaspoon of cumin
  • 1 teaspoon of chili powder
  • 1 teaspoon of salt
  • 1 can (15 ounces) of diced tomatoes
  • 4 cups of chicken broth
  • 1 can (15 ounces) of black beans, drained and rinsed
  • 1 can (4 ounces) of diced green chilies
  • 2 cups of cooked chicken, shredded
  • 1/2 cup of fresh cilantro, chopped
  • Tortilla chips
  • Grated cheese, sour cream, and/or avocado for topping

Directions

  1. Heat the olive oil in a large pot over medium heat.
  2. Add the onion, garlic, and jalapeno and cook until the onion is softened, about 5 minutes.
  3. Stir in the cumin, chili powder, and salt and cook for 1 minute.
  4. Add the tomatoes, chicken broth, black beans, and green chilies and bring to a boil.
  5. Reduce the heat and simmer for 20 minutes.
  6. Stir in the chicken and cilantro and cook for an additional 5 minutes.
  7. Serve with tortilla chips, grated cheese, sour cream, and/or avocado.
