Ingredients

  • 1 tablespoon olive oil
  • 1 onion, finely chopped
  • 2 cloves of garlic, minced
  • 2 cups mushrooms, quartered
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon dried oregano
  • 1/4 teaspoon dried basil
  • 1/2 cup heavy cream
  • 1 cup grated Parmesan cheese
  • 1/2 cup chicken broth
  • 1 (9 ounce) package refrigerated tortellini
  • 2 tablespoons chopped fresh parsley (optional)

Directions

  1. Heat the olive oil in a large skillet over medium heat.
  2. Add the onion and garlic and cook for 2 minutes, stirring frequently.
  3. Add the mushrooms and season with salt, pepper, oregano, and basil. Cook for 5 minutes, stirring occasionally.
  4. Stir in the heavy cream and Parmesan cheese and cook for 2 minutes.
  5. Add the chicken broth and bring to a simmer. Simmer for 5 minutes.
  6. Add the tortellini and cook for 8 minutes, stirring occasionally.
  7. Garnish with fresh parsley, if desired, and serve.
