Place potatoes in a large pot and cover with cold water. Bring to a boil over high heat and cook for 10-12 minutes, or until potatoes are tender.
Drain potatoes and return to the pot. Add buttermilk, melted butter, salt, pepper and garlic. Use a potato masher to mash potatoes to desired consistency.
Stir in parsley and serve. Enjoy!
