Directions
In a skillet over medium-high heat, cook the chorizo sausage for about 5 minutes until it is cooked through.
Add the queso fresco and stir to combine.
Heat the olive oil in a separate skillet over medium-high heat.
Add the tortillas, one at a time, and cook for 1 minute per side.
Spread the chorizo sausage and queso fresco mixture onto one side of the tortilla.
Top with sliced avocado and fold the tortilla in half.
Continue with the remaining tortillas.
Serve warm.
