Ingredients

  • 1 head of romaine lettuce, chopped
  • 1 cucumber, peeled and diced
  • 1 red bell pepper, diced
  • 1 yellow bell pepper, diced
  • 1/4 cup feta cheese, crumbled
  • 1/4 cup kalamata olives, pitted and chopped
  • 1/4 cup olive oil
  • 1/4 cup fresh lemon juice
  • 2 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1/2 teaspoon ground cinnamon
  • 1/2 teaspoon paprika
  • 1/4 teaspoon ground black pepper
  • Salt to taste

Directions

  1. In a large bowl, combine the lettuce, cucumber, bell peppers, feta and olives.
  2. In a small bowl, whisk together the olive oil, lemon juice, garlic, cumin, coriander, cinnamon, paprika, pepper and salt.
  3. Pour the dressing over the salad and toss to combine.
