Ingredients

  • 2 tablespoons olive oil
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 2 medium carrots, diced
  • 2 celery stalks, diced
  • 1 small sweet potato, diced
  • 1 large pumpkin, peeled and cubed
  • 2 cups vegetable stock
  • 1 can (14 ounces) diced tomatoes
  • 1 tablespoon maple syrup
  • Salt and pepper to taste

Directions

  1. Heat the olive oil in a large pot over medium-high heat.
  2. Add the onion and garlic and cook until softened, about 5 minutes.
  3. Add the cumin and coriander and stir to combine.
  4. Add the carrots, celery, sweet potato, and pumpkin and stir to combine.
  5. Pour in the vegetable stock and diced tomatoes and stir to combine.
  6. Bring to a boil, then reduce the heat to low and simmer for 30 minutes.
  7. Add the maple syrup, salt and pepper to taste, and stir to combine.
  8. Serve warm.
