Ingredients

  • 1 lb chicken breast, cooked and shredded
  • 1 red bell pepper, diced
  • 2 cups romaine lettuce, shredded
  • 1/4 cup mayonnaise
  • 2 tablespoons Dijon mustard
  • 8 slices whole wheat bread
  • Salt and pepper to taste

Directions

  1. In a large bowl, combine chicken, red bell pepper, and lettuce.
  2. In a small bowl, mix together the mayonnaise, mustard, salt, and pepper.
  3. Add the mayonnaise mixture to the chicken mixture and stir until evenly combined.
  4. Spread the mixture onto the slices of bread and top with the remaining slices.
  5. Cut the sandwiches into halves and serve.
