Ingredients

  • 4 eggs
  • 1/4 cup milk
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 cup shredded cheese
  • 1/2 cup diced vegetables (optional)

Directions

  1. Preheat oven to 350°F.
  2. Lightly grease a muffin tin with cooking spray.
  3. In a medium bowl, whisk together eggs, milk, salt, and pepper.
  4. Divide cheese and vegetables (if using) among muffin tin cups.
  5. Pour egg mixture over cheese and vegetables, filling each cup about 3/4 full.
  6. Bake for 15 minutes, or until eggs are set and lightly browned.
  7. Let cool for 5 minutes before removing from muffin tin and serving.
