Ingredients

  • 2 tablespoons olive oil
  • 1 large onion, diced
  • 2 cloves garlic, minced
  • 1 red bell pepper, diced
  • 2 cups diced pumpkin
  • 1 (15 ounce) can black beans, drained and rinsed
  • 1 (15 ounce) can diced tomatoes
  • 1 (15 ounce) can tomato sauce
  • 2 tablespoons chili powder
  • 2 teaspoons cumin
  • 1 teaspoon oregano
  • 1 teaspoon smoked paprika
  • Salt and pepper to taste

Directions

  1. Heat the oil in a large pot over medium heat. Add the onions and garlic and cook until softened, about 5 minutes.
  2. Add the bell pepper and pumpkin and cook for another 5 minutes, stirring often.
  3. Add the black beans, diced tomatoes, tomato sauce, chili powder, cumin, oregano, smoked paprika, and salt and pepper. Stir to combine.
  4. Bring to a boil, then reduce the heat to low and simmer for 20 minutes, stirring occasionally.
  5. Serve with a dollop of sour cream and some crusty bread, if desired.
