Ingredients
2 tablespoons olive oil
1 large onion, diced
2 cloves garlic, minced
1 red bell pepper, diced
2 cups diced pumpkin
1 (15 ounce) can black beans, drained and rinsed
1 (15 ounce) can diced tomatoes
1 (15 ounce) can tomato sauce
2 tablespoons chili powder
2 teaspoons cumin
1 teaspoon oregano
1 teaspoon smoked paprika
Salt and pepper to taste
Directions
Heat the oil in a large pot over medium heat. Add the onions and garlic and cook until softened, about 5 minutes.
Add the bell pepper and pumpkin and cook for another 5 minutes, stirring often.
Add the black beans, diced tomatoes, tomato sauce, chili powder, cumin, oregano, smoked paprika, and salt and pepper. Stir to combine.
Bring to a boil, then reduce the heat to low and simmer for 20 minutes, stirring occasionally.
Serve with a dollop of sour cream and some crusty bread, if desired.
