Ingredients
- 2 cups all-purpose flour
- 1 teaspoon salt
- 1/2 cup vegetable shortening
- 4 tablespoons cold water
- 4-5 large peaches, peeled, pitted and sliced
- 1/2 cup white sugar
- 2 tablespoons cornstarch
- 1/4 teaspoon ground nutmeg
- 1/4 teaspoon ground cinnamon
- 1 tablespoon butter
Directions
- Preheat oven to 375 degrees F (190 degrees C).
- In a medium bowl, mix together the flour and salt. Cut in the shortening with a pastry blender or two knives until the mixture looks like coarse crumbs. Gradually add the cold water, stirring with a fork until the dough comes together.
- Roll out the dough on a lightly floured surface and place in a 9 inch pie plate. Trim the excess dough, leaving a 1/2 inch overhang. Fold the overhang under and crimp the edges with a fork.
- In a large bowl, combine the peaches, sugar, cornstarch, nutmeg, and cinnamon. Pour into the prepared pie crust and dot with butter.
- Bake in preheated oven for 40 minutes, or until the crust is golden brown and the filling is bubbly.
- Let cool before serving.
