Ingredients

  • 2 cups all-purpose flour
  • 1 teaspoon salt
  • 1/2 cup vegetable shortening
  • 4 tablespoons cold water
  • 4-5 large peaches, peeled, pitted and sliced
  • 1/2 cup white sugar
  • 2 tablespoons cornstarch
  • 1/4 teaspoon ground nutmeg
  • 1/4 teaspoon ground cinnamon
  • 1 tablespoon butter

Directions

  1. Preheat oven to 375 degrees F (190 degrees C).
  2. In a medium bowl, mix together the flour and salt. Cut in the shortening with a pastry blender or two knives until the mixture looks like coarse crumbs. Gradually add the cold water, stirring with a fork until the dough comes together.
  3. Roll out the dough on a lightly floured surface and place in a 9 inch pie plate. Trim the excess dough, leaving a 1/2 inch overhang. Fold the overhang under and crimp the edges with a fork.
  4. In a large bowl, combine the peaches, sugar, cornstarch, nutmeg, and cinnamon. Pour into the prepared pie crust and dot with butter.
  5. Bake in preheated oven for 40 minutes, or until the crust is golden brown and the filling is bubbly.
  6. Let cool before serving.
