Ingredients

  • 1 cup of all-purpose flour
  • 1 teaspoon of baking soda
  • 1/2 teaspoon of salt
  • 1/2 cup of butter, softened
  • 1/2 cup of packed brown sugar
  • 1/4 cup of white sugar
  • 1 egg
  • 2 ripe bananas, mashed
  • 1 teaspoon of vanilla extract
  • 3 cups of quick-cooking oats
  • 1/2 cup of chopped walnuts or pecans

Directions

  1. Preheat oven to 350 degrees F (175 degrees C).
  2. In a medium bowl, mix together the flour, baking soda, and salt. Set aside.
  3. In a large bowl, cream together the butter, brown sugar, and white sugar until smooth. Beat in the egg, then stir in the mashed bananas and vanilla. Gradually blend in the dry ingredients.
  4. Stir in the oats and nuts. Drop by spoonfuls onto ungreased cookie sheets.
  5. Bake for 12 to 15 minutes in the preheated oven. Allow cookies to cool on baking sheet for 5 minutes before transferring to a wire rack to cool completely.
