Ingredients

  • 1 can (15 oz.) black beans, rinsed and drained
  • 1 can (15 oz.) chickpeas, rinsed and drained
  • 1 red bell pepper, diced
  • 1 cup cherry tomatoes, halved
  • 1/2 cup red onion, diced
  • 1/2 cup fresh parsley, chopped
  • 1/4 cup olive oil
  • 2 tablespoons red wine vinegar
  • 1 teaspoon garlic, minced
  • 1 teaspoon Italian seasoning
  • Salt and pepper, to taste

Directions

  1. In a large bowl, combine the black beans, chickpeas, bell pepper, cherry tomatoes, red onion, and parsley.
  2. In a small bowl, whisk together the olive oil, red wine vinegar, garlic, Italian seasoning, salt, and pepper.
  3. Pour the dressing over the bean mixture and stir to combine.
  4. Serve chilled or at room temperature.
