- 1 red bell pepper, diced
- 1 cup cherry tomatoes, halved
- 1/2 cup red onion, diced
- 1/2 cup fresh parsley, chopped
- 1/4 cup olive oil
- 2 tablespoons red wine vinegar
- 1 teaspoon garlic, minced
- 1 teaspoon Italian seasoning
- Salt and pepper, to taste
Directions
- In a large bowl, combine the black beans, chickpeas, bell pepper, cherry tomatoes, red onion, and parsley.
- In a small bowl, whisk together the olive oil, red wine vinegar, garlic, Italian seasoning, salt, and pepper.
- Pour the dressing over the bean mixture and stir to combine.
- Serve chilled or at room temperature.
