Ingredients
2 packages (8 ounces each) cream cheese, softened
1 can (15 ounces) pumpkin puree
1 cup sugar
2 eggs
2 teaspoons ground cinnamon
1 teaspoon ground ginger
1/2 teaspoon ground nutmeg
1/2 teaspoon salt
1/3 cup all-purpose flour
1 teaspoon vanilla extract
1/2 cup chopped pecans (optional)
1/2 cup graham cracker crumbs
1/4 cup butter, melted
Directions
Preheat oven to 350°F.
In a large bowl, combine cream cheese, pumpkin, sugar, eggs, spices, salt, and flour. Beat until smooth.
Stir in vanilla and pecans, if using.
In a small bowl, combine graham cracker crumbs and melted butter.
Press mixture into the bottom of a 9-inch springform pan.
Pour cream cheese mixture into pan.
Bake for 50-60 minutes or until center is almost set.
Cool on wire rack for 10 minutes. Run a knife around edges of pan to loosen and cool completely.
Refrigerate for at least 4 hours before serving.
