Ingredients

  • 4 boneless, skinless chicken breasts
  • 4 slices of prosciutto
  • 1/4 cup herbed goat cheese
  • 2 tablespoons olive oil
  • Salt and pepper, to taste

Directions

  1. Preheat oven to 375 degrees F.
  2. Place chicken breasts on a cutting board, and season with salt and pepper to taste.
  3. Spread herbed goat cheese evenly over each chicken breast, and wrap each breast with a slice of prosciutto.
  4. Heat olive oil in an oven-safe skillet over medium-high heat. Add chicken breasts and cook for 2-3 minutes, flipping once, until prosciutto is slightly crisp.
  5. Transfer skillet to preheated oven and cook for an additional 10-15 minutes, or until chicken is cooked through and cheese is melted.
  6. Serve hot and enjoy!
