Ingredients

  • 1 large mango, peeled and diced
  • 1/4 cup diced red onion
  • 1/4 cup chopped fresh cilantro
  • 1 tablespoon sesame oil
  • 2 tablespoons rice vinegar
  • 1 tablespoon honey
  • 1 teaspoon grated fresh ginger
  • 1/4 teaspoon red pepper flakes
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 pound boneless, skinless chicken breasts, cooked and diced
  • 2 tablespoons toasted sesame seeds

Directions

  1. In a large bowl, combine the mango, red onion, and cilantro.
  2. In a small bowl, whisk together the sesame oil, rice vinegar, honey, ginger, red pepper flakes, salt, and pepper.
  3. Pour the dressing over the mango mixture and toss to combine.
  4. Add the cooked chicken to the salad and toss to combine.
  5. Sprinkle the toasted sesame seeds over the top of the salad.
  6. Serve immediately.
