Ingredients

  • 1 tablespoon olive oil
  • 1 pound spicy sausage, casing removed and cut into small pieces
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1/2 teaspoon dried oregano
  • 4 cups chicken broth
  • 2 (15 ounce) cans fire-roasted diced tomatoes
  • 1 (15 ounce) can corn, drained
  • 1/2 teaspoon cayenne pepper
  • 1/2 teaspoon smoked paprika
  • 1/4 teaspoon black pepper
  • 1/2 cup heavy cream
  • 2 tablespoons chopped fresh parsley

Directions

  1. Heat olive oil in a large pot over medium heat.
  2. Add sausage and cook until nearly cooked through, about 5 minutes.
  3. Add onion and garlic and cook until onion is softened, about 5 minutes.
  4. Add oregano and stir to combine.
  5. Add chicken broth, tomatoes, corn, cayenne pepper, smoked paprika, and black pepper and bring to a boil.
  6. Reduce heat to low and simmer for 10 minutes.
  7. Stir in cream and simmer for 5 minutes.
  8. Garnish with parsley and serve.
