Ingredients
1 tablespoon olive oil
1 pound spicy sausage, casing removed and cut into small pieces
1 onion, chopped
2 cloves garlic, minced
1/2 teaspoon dried oregano
4 cups chicken broth
2 (15 ounce) cans fire-roasted diced tomatoes
1 (15 ounce) can corn, drained
1/2 teaspoon cayenne pepper
1/2 teaspoon smoked paprika
1/4 teaspoon black pepper
1/2 cup heavy cream
2 tablespoons chopped fresh parsley
Directions
Heat olive oil in a large pot over medium heat.
Add sausage and cook until nearly cooked through, about 5 minutes.
Add onion and garlic and cook until onion is softened, about 5 minutes.
Add oregano and stir to combine.
Add chicken broth, tomatoes, corn, cayenne pepper, smoked paprika, and black pepper and bring to a boil.
Reduce heat to low and simmer for 10 minutes.
Stir in cream and simmer for 5 minutes.
Garnish with parsley and serve.
Interesting Facts
This chowder is perfect for a weeknight meal, as it can be made in just 25 minutes.
The spicy sausage gives the chowder a nice kick, but can be omitted for a milder flavor.
The fire-roasted diced tomatoes add a smoky flavor to the chowder.
